Salmon, Bacon, and Greens


I wanted to explore a salad book from my job that I picked up and started with the idea of Salmon and bacon. I wanted it to be a salad so I went with chard. I wanted the flavor to be balsamic vinegar throughout the meal.

Salmon:
4 slices of bacon
2 minced shallots
1/3 cup balsamic vinegar
1 tbs olive oil
Salt and pepper

Cook the bacon on the stove top until crisp and set aside. Saute chard in bacon grease whole for one minute on high on each side. Set on a plate.  Add oil and balsamic vinegar and shallots to bacon grease and sauté until translucent. Add salmon and brown on each side until done.
Chop bacon into tiny bits. Combine chard, salmon and top with bacon bits. Rich and delicious. Yum.

First off: I made the bread myself! It was the first time I have ever made a loaf of bread and it turned out… well it didn't really rise a whole lot. It was whole wheat as well. I thought about what the best way to use the bread and came up with wet chicken sandwiches.

Two loafs came out kinda like a foot long at Subway would. We each got one. The chicken was tenderized and marinade before we threw it on the grill

Marinade: Lemon, Balsamic Vinegar, Agave Syrup, Salt, Pepper

We sautéed the garlic and shallots butter and then added about twelve regular mushrooms sliced. Set aside.

We assembled the sandwiches with mayo and mustard, added lettuce and mozzarella to complete it.
