Salmon,
Bacon, and Greens

I
wanted to explore a salad book from my job that I picked up and started with
the idea of Salmon and bacon. I wanted it to be a salad so I went with chard. I
wanted the flavor to be balsamic vinegar throughout the meal.
Salmon:
4
slices of bacon
2
minced shallots
1/3
cup balsamic vinegar
1 tbs
olive oil
Salt
and pepper
Cook
the bacon on the stove top until crisp and set aside. Saute chard in bacon
grease whole for one minute on high on each side. Set on a plate. Add oil and balsamic vinegar and shallots to
bacon grease and sauté until translucent. Add salmon and brown on each side
until done.
Chop
bacon into tiny bits. Combine chard, salmon and top with bacon bits. Rich and
delicious. Yum.
